Tampa’s culinary scene is one blended of many cultures and cuisines. Cuban cuisine, however, reins in our city and has shaped the identity of Tampa’s own culinary personality. This seminar takes a look at the history of traditional Cuban cuisine and how it helped to influence the Tampa that we know and love today. Led by Cuban Queen, Felicia LaCalle, of Kuba Cocina, whose influences are strongly rooted in her Abuela’s kitchen. Take a seat in the Epicurean Theatre as she shows how to add a more modern spin to traditional dishes to keep them fresh, exciting, and flavorful all while maintaining its nostalgia.

Bio:
Chef and owner of Kuba Cocina, Felicia (“Phe”) LaCalle says Cuban cooking is “in her blood” thanks to learning her skills in the most traditional way possible: from her mother. Since then, she’s been perfecting her signature spin on traditional Cuban cuisine as the former Executive Sous and Regional Pastry Chef at Roy’s as well as Executive Chef at Samba Room and other notable restaurants. Starting inside Heights Public Market within the historic Armature Works in downtown Tampa, there is another St. Pete Beach location opening soon and another taking over the old Refinery located in Seminole Heights this year.
