ABOUT THE CUISINE

Jamaican cuisine is a bold and vibrant reflection of the island’s rich cultural heritage. Shaped by African, European, and Asian influences, it brings together a world of tastes on the island. From hearty Rice and Peas to the iconic Ackee and Saltfish, every dish tells a story of family, community, and celebration. Jamaican food is all about warmth and sharing – flavourful, comforting dishes made to bring people together.


ABOUT THE CHEF

A message from chef Delores:

"Hello I’m Delores from Jamaica. I love cooking delicious, nutritional food, using lots of garlic and spices. I was born into a family of chefs. As a young child growing up, I always helped my Grandmother with the cooking, preparing different dishes whilst my mother was out working as a chef. In 2001 I came to the UK on my own, then in 2005 they took away my immigration status and I was no longer allowed to work – 15 years ago and I’m still waiting!

Luckily I am a very positive person, I love singing and my belief in God has kept me strong all these years. I really do love to cook and entertain people. I feel very positive when I’m cooking. A dish that reminds me of home is rice and peas. In my country we didn’t cook rice in the week – only on Sunday. So rice, peas and chicken is like the Sunday roast equivalent in the UK. In the week we eat yam, green banana, cassava.”

This menu contains meat (chicken) but is vegetarian-friendly (5/6 dishes are meat-free). Allergens include: celery, gluten, milk, mustard.

Please let us know if you have any specific dietary requirements so our team can be aware ahead of the class. Kindly note that we do not substitute ingredients to accommodate dietary needs, so please only book into classes that suit your dietary preferences.

THE CLASS FORMAT

Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.

While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
