We’ll be exploring the full range of possibilities that pate a choux (the egg-y dough that cream puffs and eclairs are made out of) presents us in creating delectable, whimsical pastries. We’ll make eclairs filled with decadent pastry cream and topped with chocolate ganache, pretzel eclairs filled with caramel cream, and even try our hand at zeppole, a fried puff filled with cannoli cream. With pate a choux, the sky’s the limit!
