ABOUT THE CUISINE

Iranian cuisine comes from the Middle East and Central Asia, shaped by a rich history of Persian culture, regional diversity, and trade along the Silk Road. It combines fresh herbs, grains, legumes, fruits, nuts, and spices to create balanced and aromatic dishes. Meals are hands-on, social, and meant to be shared, with signature dishes like Polo Shoshtari, Nahavandi Aubergine Stew, and Gilani Sour Kebab highlighting the warmth, community, and culinary creativity of Iranian food culture.


ABOUT THE CHEF

A message from our Chef Raha:

“I am Raha and I come from Nahavand, a small city in the centre of Iran. In the UK, you have English,Scottish, Welsh and Irish people. In Iran, we have Turkish, Arab, Kurdish and Lorish people. I am Lorish. When I was nine, my mum went to work and didn’t have time to cook, so I cooked for her. From a young age, I would change recipes. I still do! My children ask me what a dish is called, but I have often just created it, so it does not have a name! Food is very important in my country. We consider food to be part of the joy of life;it is not just for survival. A meal should not only be the taste, it should be how it looks, how it smells and how it feels. I arrived in the UK in January 2024 with my husband and two daughters. At first, I was worried about everything, but I have found that British people are very kind. Someone referred me to Migrateful, and here I am today. I want to share my country’s delicious recipes. I have chosen dishes from all four corners of Iran so you can experience many flavours and ingredients.”

  • Gilani Sour Kebab | Meat (Lamb); Milk, Tree Nuts (Walnuts)
  • Iranian Salad | Vegetarian; Eggs
  • Ferni (Iranian Rice Pudding) | Vegetarian; Milk, Tree Nuts (Almonds, Pistachios)

This menu contains meat (lamb) but is vegetarian friendly (5/6 dishes are meat-free). Allergens include: celery, eggs, gluten, milk, sesame, tree nuts.

Please let us know if you have any specific dietary requirements so our team is aware ahead of the class, but kindly note that we will not be substituting any ingredients to accommodate dietary needs, so please only book into classes that suit your dietary requirements.

THE CLASS FORMAT

Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.

While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
