ABOUT DILLAN MENA HEAD OF GALVESTON'S BAGEL COMPANY | Chef Dillan’s passion for food was sharpened in high-end kitchens, where precision, discipline, and attention to detail defined every plate. Trained in elevated culinary environments, he developed a deep respect for technique—learning how to balance bold flavors with refined execution.
His style reflects that foundation. Thoughtfully composed dishes, layered textures, and intentional flavor pairings define his approach—whether it’s a delicate oyster presentation with scallop, pear gastrique, and caviar, or a perfectly executed filet paired with Gulf seafood and house-made sauces.
As his career evolved, Dillan expanded beyond traditional fine dining, bringing his skillset into fast-paced, high-volume concepts without sacrificing quality. He has opened and operated multiple kitchens, building menus that translate chef-driven standards into experiences that are both elevated and approachable.
At his core, Dillan is a builder—of kitchens, of teams, and of concepts that last. Today, he focuses on creating food that bridges the gap between refined technique and real-world dining, proving that high-level execution doesn’t have to be reserved for white tablecloths.
ABOUT THE 1886 FREDERICK AND MARY BEISSNER HOUSE | English architect William Herbert Roystone (1856-1922) designed this elaborate Queen Anne house for cotton clerk Frederick Beissner and his wife, Mary. The building features a diagonally set front entrance gallery, imbricated shingles and lavish trim in a sunflower motif that reoccurs in the cross-gabled roof. Roystone worked in Galveston 1886-1890 and was briefly associated with the office of Nicholas Clayton. Located in the East End Historic District, the Texas Historical Commission designated the Beissner house a Recorded Texas Historic Landmark in 1990.
