Nourish Colorado and CSU Extension are proud to host a two-day Hazard Analysis Critical Control Point (HACCP) Training designed to equip food producers, processors, and industry professionals with the knowledge and skills needed to develop and implement effective food safety plans.
This hands-on training follows the nationally recognized curriculum developed by the International HACCP Alliance. Participants will gain practical tools and insights to meet regulatory requirements, strengthen their operations, and protect public health.
Cost*:
Tier 1: Very Small Processors
Register before April 22nd : $150
Register after April 22nd : $250
Very Small Processors are defined as:
- Single facility
- 1–10 employees
- Annual sales of less than $2.5 million
- Can include custom-exempt and processors less than 2 years in operation
Tier 2: Small and Large Processor
Register before April 22nd : $450
Register after April 22nd : $550
Small and Large Processors are defined as:
- 11+ employees
*Additional support may be available, upon request. Funds are able for lodging may be available to participants located outside of the Pueblo area. Please reach out to the contact above to submit a request for consideration.

- Food and meat processors and manufacturers, especially those federally inspected.
- Managers, supervisors, and quality assurance staff.
- Regulatory personnel, inspectors, and food safety coordinators.
- Food processors and manufacturers looking to access wholesale or retail markets.
- Anyone responsible for developing, implementing, or overseeing a HACCP plan.
Who Should Not Attend:
This course is not intended for produce operations or food or agriculture businesses that operate under cottage food regulations.
