Bring the sun-drenched flavors of Spain into your kitchen in this immersive cooking class with Chef Instructor Shawnie Kelley. With her deep passion for regional cuisine and hands-on teaching style, Chef Shawnie guides you step-by-step through the essential techniques behind Spain’s most iconic dishes. You’ll learn how to build a deeply flavorful sofrito — the foundational blend of slowly sautéed aromatics that gives paella its soul — properly steam shellfish so it’s tender and succulent, and master the art of developing the coveted socarrat, the crispy, caramelized layer of rice at the bottom of the pan that defines an exceptional paella.

This class blends culinary technique, cultural storytelling and vibrant Mediterranean flavors into a festive, shareable meal you’ll feel confident recreating at home.

On the Menu

Paella Mixta: A stunning saffron-infused rice dish combining chicken, chorizo and fresh seafood. You’ll build a traditional sofrito, steam shellfish to perfection and layer flavors as the rice cooks to develop the prized golden socarrat.

Greens and Citrus Salad: Seasonal greens tossed with bright citrus segments, dried fruit, and nuts, finished with cheese and a balanced vinaigrette that adds acidity and depth to complement the richness of the paella.

Mini Basque Cheesecakes: Mini versions of Spain’s famed “burnt” Basque cheesecake — intentionally baked at high heat to create a deeply caramelized, mahogany-colored top with a lightly bittersweet edge. Inside, the texture is luxuriously creamy and custardy, striking the perfect balance between rustic and elegant.

What to Expect:
Classes are limited to 16 students for a personalized cooking experience. Participants will be standing, cooking, and working for most of the class, so please wear comfortable, closed-toe shoes and tie back long hair.

Age Requirement: Open to ages 15 and up.

Cancellation Policy: Cancel up to 48 hours before class time to receive a full refund or class credit.
