Edible Magazine San Luis Obispo invites you to an intimate, Peruvian cuisine lunch with storytelling by Chef Jhackelin Catalina Vargas of COYA, featured in Edible Magazine’s Fall 2023 issue. This lunch takes place at the Edible Magazine Summer House. The menu is designed to show the dimensions of Peru: coast, mountains and jungle. And just as important as the food, is Peruvian ritual, which guests will partake in. Wine is also included.
*This lunch is a special edition to Edible Magazine San Luis Obispo’s signature meal series, “Use My Kitchen, Tell Your Story”, which features chefs who have immigrated to the United States, who then tell their stories through the dishes they serve.
Please note, this event is entirely outdoors so please plan and dress accordingly.

Course One
Ceviche de Pescado
fish cooked in lemon juice, onion and spices, served with boiled potatoes
Course Two
Pachamanca
pork and chicken, potato,sweet potato, pancas of corn leaves, huacatay, chincho and spices cooked in the earth - a very special, traditional cooking process
Lomo Saltado
strips of beef sauteed with onions, tomatoes and cilantro, served with lightly seasoned rice
Course Three
Alfajores
Peruvian style maca cookie with caramel filling

The Summer House is a celebration of all things culinary, as we bring the pages of the magazine to life at the beautiful La Lomita Ranch in San Luis Obispo. This four-day gathering of experiences is an opportunity to try one-time-only food collaborations; cooking classes; farm shares; dinner parties; media meet-and-greets with Edible magazine staff; chef’s tables; and more, enjoying it all- together.
