• Octopus & Arugula Salad – Arugula with octopus, piquillo peppers, capers, parsley, shallots, lime juice & zest, dehydrated potato, and Kalamata olives.
• Brussels Sprouts Salad – Brussels sprouts served over a base of homemade guacamole with toasted sliced almonds, pomegranate seeds, and Japanese dressing.
2nd Course
(choose one)
• Stuffed Artichoke – Filled with smoked eggplant purée, leek cream, and serrano ham.
• Australian Prawns al Ajillo – Australian prawns sautéed in garlic sauce with Pimentón de la Vera, flambéed with brandy, and served alongside a parmentier of tri-color baby heirloom potatoes.
3rd Course
(choose one)
• Seabass Cassoulet – A Mediterranean interpretation of the classic French dish. Slow-cooked white beans prepared in traditional cassoulet style, finished with delicate seabass in place of meat, preserving the rich, comforting flavors of the original preparation.

I will perform the activity in a safe manner, respecting my personal physical limits. I will not participate in the activity under the influence of any alcohol or illegal drugs, or any intoxicant, narcotic, prescription medicine, or other substance which could impair my ability to safely engage in the activities.
Transfer of image rights: By means of this document, I authorize the use by Yurbban Hospitality Group, Amalia Miami & Lennox Hotels Miami Beach of the image rights on photographs and videos, as well as the right of reproduction, public communication, transformation, distribution and its use in social media platforms and corporate websites, without further compensation or permission.
