Gather around the butcher's block to learn everything you've ever wanted to know about breaking down chickens. Everyone will take home with their own free-range, organically-raised bird—bones and all. We'll have Meat Hook charcuterie and beverages for some in-class snacking before the real cutting begins.
This hands-on workshop focuses on the fundamentals that every home chef needs. Buying whole chickens saves you money, honors the whole bird, and allows you the flexibility to break down your bird for any recipe.
We'll start with the basics of boning knife use and care, then go into a chicken breakdown demo. Then each participant will spatchcock and break down a whole chicken into eight pieces. You'll also learn to debone a chicken leg and make chicken cutlets. We'll talk cooking techniques and ideas for utilizing the entire bird at-home.
