The Concept: Fine Country Dining

After honing his craft within some of London’s most prestigious private members’ clubs, Chef Bayley returns to his roots in South Lincolnshire with a clear purpose:

To bring restaurant-level precision into warm, character-filled local settings.

Each evening is designed around one elegant shared table in the historic room — encouraging relaxed conversation, shared experience, and a slower pace of dining.

Couples will be seated side-by-side, with all guests dining together across one beautifully styled table beneath the room’s coffered ceilings and carved oak detail.



The Menu: A Celebration of Spring

Designed specifically for this grand setting, Bayley’s five-course menu reflects the delicate transition into lighter evenings. Expect a vibrant journey through the best of local spring produce, where:

  • Brightness meets comfort: Inventive dishes balanced with rich, grounding elements.
  • Vibrant Contrasts: Acidity and citrus to lift the palate, paired with fresh herbs for exceptional clarity.
  • A Slower Pace: An evening intended to be savored, allowing guests to appreciate the craftsmanship of each course.


SAMPLE MENU

Amuse-Bouche:

Citrus-Cured Salmon Gravlax, Dill Oil, Lemon Zest, Confit Fennel and Blood Orange Salad.

Entree:

Filo Tartlet of Braised Lamb, Minted Pea Puree, Pickled Radish, Cucumber, Lemon Vinnaigrette and Peashoots.

Soup:

Leek Vichyssoise, Green Apple, Creme Fraiche and Chives.

Main:

Red Wine Braised Beef, Smoked Bacon, Turned Mushrooms, Pearl Onions and Buttered Pommes Puree

Dessert:

Lemon Posset, Shortbread Crumb, Lemon Balm and Seasonal Fruit Compote.



The Setting: One Shared Table

True to the spirit of the historic Magistrate’s Room, this experience is designed around one shared table. Under the room’s magnificent coffered ceilings and intricate hand carvings, food becomes the catalyst for conversation and community. Gaze out of high arched windows as you enjoy an evening that is warm, elegant, and deeply memorable.

A word from the chef

My name is Bayley, and I’m the founder of The Soleil — a fine country dining concept built around intimate, seasonal pop-up experiences across South Lincolnshire.

After gaining experience working within private members’ clubs in London, I returned home with a clear vision, to create thoughtfully curated dining evenings that bring restaurant-level care and atmosphere into unique local venues.

For this five-course spring dining experience at The Sessions House, I’ve designed the menu to reflect the season.

Fresh, vibrant ingredients balanced with comforting elements that suit the transition into lighter evenings. Spring produce allows for brightness and contrast: acidity to lift, richness to comfort, and herbs and citrus to bring clarity to each dish.

This evening is designed to be enjoyed around one shared table. I believe food is at its best when it brings people together — creating conversation, connection, and a slower pace of dining.

My aim is not simply to serve a meal, but to create a complete experience that feels warm, elegant, and intentional within such a beautiful setting.
