① 前菜 | Seasonal Starter
Chilled Japanese Pickled Tomato with Lavender-Infused Vinaigrette Jelly
Light, refreshing and elegant — a classic Japanese-style starter to gently awaken the palate.
(Lavender is delicately balanced to complement, not overpower.)
② 椀物 | Wan-mono
Chrysanthemum-Cut Tofu with Enoki & Egg Sauce,
Finished with Edible Chrysanthemum
A nourishing tofu dish symbolising longevity and warmth, gently finished with delicate edible chrysanthemum petals.
③ 焼物 | Aburi Course
Aburi Salmon with Miso Foam & Dried Shiso Flower Powder
Lightly torched salmon paired with fragrant miso foam and dried shiso flower powder, offering a refined umami finish inspired by Japanese spring flavours.
④ 主菜 | Main Course
