When dinner calls for something truly special, Japanese A5 Wagyu Beef always rises to the occasion. Supremely marbled, exceptionally juicy, and unbelievably flavorful, it’s the best tasting, highest quality beef available. It simply doesn’t get much better. Enter Chef Edgar Rico of nationally acclaimed Nixta Taqueria to show us how to take this celebrated delicacy to the next level.
With the energy and experience of bringing an array of incredible flavors of Mexico to Austin, Chef Rico will take the night’s menu to a celebratory place, starting with playful “nachos” that pair a soy and sesame–laced pico de gallo with perfectly grilled Japanese A5 Wagyu and crispy egg roll skins. Next, learn the best method to quickly sear Japanese A5 Wagyu, which will be served with an umami-rich glaze, a bright ponzu, and a silky corn purée. The night will wrap with a melt-in-your-mouth Japanese custard pudding for dessert.
Local guest chef demonstration. You will be served dinner, but you will not be cooking in this class. For ages 21+. You’ll enjoy an array of Japanese sakes paired with your meal.

About Chef Edgar Rico:
Chef Edgar Rico, Owner and Chef of Nixta Taqueria, graduated from the Culinary Institute of America and launched his career with lauded chefs such as Tom Colicchio and Ludo Lefebvre in New York and California before exploring Mexico. Traveling and training his way through fine-dining restaurants like Mexico City’s Pujol and soulful home kitchens, Chef followed the food, and that journey brought him to Austin. The awards followed, from James Beard Award for Emerging Chef, Food and Wine Best New Chef, to The MICHELIN Guide Texas Young Chef Award (as well as Bib Gourmand and Green Star), a TIME 100 recipient, Food & Wine Best New Restaurant.
