This first evening focuses on New Orleans, celebrating the city where he was born through its flavors, culture, and spirit. Guests will enjoy an immersive culinary experience crafted by Chef Dannie Landry and the Traveler Café & Art Experience.
First Course: Jambalaya Risotto�A bayou-meets-European bowl of comfort — Arborio rice simmered slowly with smoky andouille, Gulf shrimp stock, trinity aromatics, and stewed tomatoes. Finished with scallion oil and a whisper of Delta spices.�A tribute to Anderson’s time in Louisiana, where the marshlands and fishermen shaped his understanding of the Gulf South.
Second Course: Beef Wellington Bite�A refined nod to Anderson’s travels through France and Europe.�Tender beef wrapped in mushroom duxelles and golden pastry, served with a creole mustard demi-glace as a meeting point between classical technique and Southern heat.�A dish that mirrors Walter’s own intersections: discipline and wildness, tradition and adventure.
Final Course: Chicory Chocolate Bread Pudding�Dark, warm, and New Orleans at heart.�French bread baked in a rich custard of cocoa, chicory coffee, and cane syrup.
