Step into the golden age of tiki with an immersive pairing dinner from Bar Solita and Virago Spirits. This multi-course experience explores the history and evolution of tropical cocktails through thoughtfully paired dishes and classic tiki libations spanning nearly a century.
The evening begins with a welcome cocktail and amuse bouche before guests enjoy a progression of island-inspired flavors, including Filipino lumpia, pineapple meatballs, seared tuna steak, and coconut-rum panna cotta. Each course is paired with a historically significant tiki cocktail reimagined with Virago Spirits rums and gin — from the 1880s Cocoyage and the classic Queens Park Swizzle to Trader Vic favorites like the Voodoo Grog and communal Tiki Bowl.
Founders and distillers from Virago Spirits will be in attendance throughout the evening, guiding guests through the cocktail pairings, sharing the stories behind the spirits, and exploring the evolution of tiki culture and tropical cocktails from their earliest origins to modern interpretations.
