About this Event

Discover the art and science of fermentation in this immersive culinary experience with Chef Ryan Fillhardt, 1440 Multiversity Culinary Arts Education faculty. Through hands-on preparation of kimchi, sauerkraut, hot sauces, and probiotic condiments, students will explore how beneficial microbes and traditional preservation methods transform simple ingredients into vibrant, flavorful foods.

Blending one of the world’s oldest culinary techniques with modern Food As Medicine, wellness, and food science principles, this class explores how fermentation transforms simple ingredients into vibrant, flavorful foods while supporting nutrition and gut health. Students will ferment vegetables, chilies, fruits, herbs, nuts, and spices using both time-honored and contemporary techniques.

Inspired by Korean, Southeast Asian, Latin American, Middle Eastern, and Californian cuisines, this experience offers a creative and practical introduction to fermentation as both a culinary craft and a functional food practice for home or professional kitchens.

By the end of the class, students will understand fermentation as both a culinary skill and a functional food practice, gaining the confidence to create and incorporate fermented foods into their own cooking. Following the workshop, guests will stroll across the patio to Kitchen Table for a nourishing seasonal dinner in community with fellow attendees, while learning more about how food is sourced and prepared with health and wellness in mind.

As a nonprofit philanthropic campus, proceeds from 1440 community education class bookings contribute to serving our community by providing scholarships and volunteer services in support of creating hope for living well. Bon appetit!


Time: 4:00-7:30 p.m.


Discovery Dinner Schedule:

  • 4:00-4:30 p.m.: Arrival & Registration
  • 4:30-6:00 p.m.: Fermentation & Preservation Basics in the Teaching Kitchen with Chef Ryan Fillhardt, 1440 Culinary Arts Education faculty
  • 6:00-7:00 p.m.: Dinner at Kitchen Table
  • 7:00-7:30 p.m.: Event Conclusion & Departures


Price: $85 per person, includes Teaching Kitchen Academy: Fermentation & Preservation Basics, dinner at Kitchen Table, and learning materials.

  • Due to the seasonality of our meals, the menu for this dinner will be announced approximately one week before the workshop.

Event Notes:

  • Guests are welcome to arrive to campus and register as early at 4:00 p.m. to enjoy our Lodge Retail Shop, Bridge of Intentions and Common Grounds Patio. Please note that other locations of campus, including the trails and jacuzzi tub, are reserved for overnight program guest use only and are not available for this local Community Education Class.
  • The class will be held in our indoor and well ventilated Teaching Kitchen.
  • Dinner will be served across campus at Kitchen Table, our communal dining room featuring indoor and outdoor seating.
  • 1440 will provide everything required for this class.
  • This program may be filmed and/or photographed to support our 1440 nonprofit mission work, marketing and learning pillars.
  • This is an 18-and-over workshop.


Cancellation Policy: Participants may request a refund up to 7 days before the event. After this period, all sales are final. All proceeds from Community Learning Events support our 1440 philanthropic and volunteer efforts.
