As you walk the streets of Lagos, you won’t get far without smelling the umami-rich aroma of sizzling beef suya. If you ask sisters Jess and Jo Edun, authors “The Flygerians Cookbook,” they’ll tell you that suya, which has equal parts bold flavor, melt-in-the-mouth texture and rich culinary history, is by far the country’s most beloved street food. In this livestream class with them, you’ll learn to make a marinade whose key ingredient is peanuts, or ground nuts, and six unapologetic spices. Then, you’ll learn to cook suya the way the street vendors of Lagos do: quickly and confidently, served with a punchy fresh salsa. But this staple cannot stand alone. We pair it with a batch of jollof rice, a dish so fundamental to Nigerian cooking and gathering that Jess and Jo can’t think of a gathering they’ve been to that didn’t have it. Finally, you’ll get a taste of modern Nigerian cooking as they show you their favorite unexpected way to use up leftover jollof rice, which is to treat it the way Italians treat leftover risotto: by making it into arancini, gently breaded and fried balls of rice studded with mushrooms, herbs and cheese.
About Jess & Jo: Sisters Jo and Jess Edun started their food careers with a residency in a pub while also catering corporate lunches. Five years later, in 2022, they opened The Flygerians restaurant in Peckham Palms, a black female-led space supporting start-up businesses. Their approach to cooking is grounded in the authenticity of their dishes and knowledge passed down through the generations and born from a desire to bring people together. Jo and Jess were featured in Vogue in a roundup of 'the best black-owned restaurants in London' and have since appeared on various TV and radio programs. The Flygerians Cookbook is their first book.
