Join the SLC and Bon Appétit for an exclusive ‘peek-behind-the-curtain’ of Whitman College’s dining facility, Cleveland Commons. This workshop offers a unique opportunity to see how sustainability ideas—like composting, local sourcing, and energy conservation—are put into practice in the highly demanding, industrial-scale food service environment. We’ll explore topics such as waste management, sustainable procurement (including regional indigenous foods), and energy-efficient operations. Participants will gain an insider's look at the infrastructure and policies that drive Whitman's Zero Waste goals and commitment to the local food system.SLC's workshops are open to the public and are offered on a 'Pay as You Can' basis.
