What is the most consumed spirit in the world? Could it be whiskey, that broad and expansive spirit made in so many different places, or vodka, whose inoffensive nature appeals to so many drinkers? To the surprise of many in the US, the most consumed spirit in the world is Baijiu (pronounce bai-ZHOE), the national spirit of China. Little seen outside it’s homeland, more exports are making their way to us, and it is an exciting time to explore this spirit that is so deeply unfamiliar to western palates.
In this class, Evan Christie will lead you on an unfamiliar journey through the world of Baijiu. Produced for over 2000 years, Baijiu can be made from a variety of starches, including sorghum, barley, rice, wheat, or even peas. The key is the fermentation, which takes place with the aid of a solid starter known as qu. Ancient methods govern the many styles of baijiu, and though only a small fraction of these are available in the US today, they still provide a deep insight into an entirely different world of spirit making.
