About this Event
In this hands-on interactive workshop participants will dive deeper into the science of sourdough. This workshop is intended for those already familiar with the basics of sourdough bread making. Participants will visualize what dough should look like at each stage of the process from initially mixing to the end of bulk fermentation. Photographs, baked loaves, and hands on dough shaping will be utilized for a deeper understanding. Participants will learn the following topics: dough temperature and DDT,bulk fermentation (stages), cold proofing, shaping techniques, stitching, scoring techniques. grains and flours, gluten structure, maximizing oven spring, reading the crumb, inclusions, hand mix vs electric mixer, dough hydration, how to calculate hydration, discard, troubleshooting, how to read sourdough recipes, etc. Participants will leave this workshop with a greater understanding of mastering sourdough. They will receive a troubleshooting guide, an exclusive Fiddler's Farm recipe, and a favorite sourdough tool.
