What You Will Learn
- The Science of Emulsion: Master the "bain-marie" technique to create a stable, airy Zabaglione without curdling the yolks.
- Macaronage & Texture: Learn the rolling and panning techniques for Amaretti to achieve the perfect balance of a crisp exterior and a soft, marzipan-like center.
- Spirit & Flavor Profiles: Discover the roles of different fortified wines used in Zabaglione.
- Plating & Layering: Master the art of presentation by layering warm Zabaglione with fresh fruit and crunchy Amaretti bits and learn how to garnish Amaretti cookies.
Class Schedule
- Introduction (15 mins): Welcome, instructor introductions, snacks and beverages.
- Amaretti (45 mins): Teacher demonstration of dough preparation followed by individual students rolling and topping cookies with a variety of traditional toppings.
- Break (10 mins): A chance to stretch your legs and enjoy more refreshments.
- Zabaglione (40 mins): Teacher demonstration on how to whip up a fresh custard, followed by a tasting and student plating with fruit and cookie crumbles.
- Wrap Up & Box (10 mins): Final questions and packaging your handcrafted treats to take home.

- Refreshments: Access to a snack counter including house-made non-alcoholic drinks, charcuterie and fruit skewers, a dessert, and a Keurig coffee station.
- Tools & Equipment: Class aprons and use of professional pastry tools during the session.
- Take-Home Treats: Participants leave with a box of their handcrafted Amaretti and freshly prepared Zabaglione.
- Recipes: All recipes and step-by-step instructions needed to recreate these Italian classics at home.

- Tickets are NON-REFUNDABLE! If you are unable to attend the class, you may transfer the ticket to another person. Tickets are not transferable to another class.
- Doors will open 10 minutes before listed class start time. Students wishing to grab seats together are encouraged to arrive when doors open, otherwise we cannot guarantee reserved seating regardless if tickets were purchased together or not.
