Gathering friends and family together for tamale-making party around Christmastime is a Mexican tradition with a long and rich history. Learn about that history while you make a batch of your own alongside guest chef Mely Martinez. You’ll learn about the endless variety of fillings that can be used to stuff tamales, and will get to pick from Chicken in Salsa Verde, Pork in Red Salsa, or Poblano Chiles with Cheese (Rajas con Queso). Mely will teach you how to prepare the corn husks used to wrap tamales, and will also give you a primer on a 201-level tamale technique that uses banana leaves instead of corn husks. Then, we’ll get into the tricky part: making a dough of masa harina, lard and broth that is robust enough to hold together but light and tender enough to be a joy to eat. You’ll learn the pro’s approach to assembling uniform, right-sized tamales, assembling your steaming pot and correctly judging when your tamales are done. At the end, you’ll have 16 gorgeous tamales and plenty of confidence to carry you through future tamale-making adventures.

About Mely: Mely Martinez was born in the coastal city of Tampico, Tamaulipas, Mexico, and was raised in a family of eight. She began to help out in her mom’s kitchen at a young age, and spent the long, tropical summers at her grandmother’s ranch in the state of Veracruz. During her time as a rural schoolteacher in the south of Mexico, Mely’s exposure to different regional customs allowed her culinary interest to grow even deeper. Throughout her life, she has lived in and traveled to many of Mexico’s states and regions, always visiting the local markets and street stands, where she believes you can find the heart of every city’s cuisine. In 2008, she started her website, Mexico in My Kitchen, where she shares Mexican recipes so that they can be passed down and preserved for new generations, as well as shared with all food lovers. Besides writing for her website, Mely enjoys traveling and gardening, as well as attending seminars, festivals, and other events related to Mexican culture and gastronomy. She also serves as a consultant to chefs and restaurateurs around the world. She lives in Dallas, Texas.

This event has limited spots, and you must register in advance via Eventbrite. One sign-up covers one device. Closed Captioning is available for this event.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to class (or within 48 hours of registering, if you sign up less than a week in advance), you will receive an email with the ingredients, equipment and prep you'll need to cook along with us, if you choose.

After class, you will receive a recording of the event, as well as a folder of recipes and resources that we discuss during the event. Class recordings are available to all registered attendees for two weeks following each event.

Payments for Milk Street live stream classes are non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final. Classes are subject to cancellation at any time.
