Walnut potica (pronounced “po-teet-zah”) is a Slovenian sweet dough pastry. Potica is a celebratory treat served at Easter, Christmas, and other festive occasions. It is one of many traditional Easter dishes (žegen) which receives a blessing on Holy Saturday. Potica is so beloved, so emblematic of Slovenia, that it was featured on some of the first stamps produced by the newly independent Slovenian government after being the first province to break away from Yugoslavia in 1991 -- or so that’s how Mary Louise tells it.
Mary Louise is a second generation (100%) Slovenian, a born and raised Elyite. She grew up eating Slovenian ethnic foods made by her mother, Rose Mavetz. The recipe featured in this class was given to Mary Louise by Rose, who used it to teach walnut potica community education classes at the Vermilion Community College in the 70s and 80s.
Students should not expect to take a full potica home with them. This class will cover the process of making this delicious treat, and students will share and eat potica in class, but leftover potica will be frozen and served at future Ely Folk School events. Students can expect to leave with a recipe and the confidence to recreate this dish at home!
