Shelburne Farms is an educational nonprofit on a mission to cultivate sustainable farming and enhance the working landscape of Vermont. They farm with complex, interconnected systems that produce both nutritious foods while also maintaining healthy soils, water, and food systems, fostering biodiversity, and climate stability.
They've been making artisanal, farmhouse Vermont Cheddar since 1980, producing over 170,000 pounds of cheddar each year. Their herd of Brown Swiss cows is pasture-raised, meaning their diet shifts seasonally. Their team of professional cheesemakers responds to slight changes in the milk by measuring acidity, moisture, and salt content depending on the diet. This hands-on process makes a consistent and delicious product that truly reflects the land it comes from.
