In today's economy, with increasing costs, product shortages, etc. People are searching more eagerly for things from the "times of old" or the "good old days" and are yearning to move out of cities into the country and become more self-sufficient. Gardens, backyard chickens, canning, bread making are all becoming more and more common. How does one get started in all of this? We've come so far from knowledge of land and earth and how it can provide for us. It's become vital to work together to learn and teach ourselves in order to pass on our individual knowledge. This year, join us as we visit different families across the US as they share with us the different things they've done to become ever more self-sufficient.

Lots of people are almost terrified of pressure canning. In this session, we will see how easy pressure canning really can be. Pressure canning meat is a wonderful way to safely store meat and then to have at hand a supply of already cooked meat when you need a quick meal. How often does a recipe say cook meat then add .......? When you have canned meat, you can skip that part of the recipe and simple open a jar of meat and move on with the recipe. This class will use USDA approved methods for home canning meat. We will discuss pressure canning chicken, beef chunks, and ground beef. Maybe the photo doesn't make the meat look appetizing because you can see through the clear glass the meat residue that normally sticks to the side of your pan and you don't notice it in your regular cooking pan. But - this is the normal way canned meat looks. The ground beef has the layer of fat at the top once it has cooled down.
