Sausage Making in Carroll Gardens

Join us for a hands-on sausage making intensive in a small class setting (no more than ten participants per class). You'll learn how to select the best meat, what the optimal grind is, basic recipe development, how to mix and emulsify, and finally how to stuff and link your very own sausages to take home. (about 1lb per participant).
