This five-course tasting menu highlights the flavors of Tuscany through refined, seasonal dishes. An inspired progression accompanies the evening’s Tenuta San Guido wines, beginning with Le Difese 2023 paired with Quaglia—quail stuffed with sausage, chestnuts, and plum, finished with a red wine reduction. Guidalberto 2023 complements Ravioli di Guancia di Manzo, delicate beef cheek ravioli with brown butter, sage, toasted hazelnuts, and Parmigiano fonduta. A vertical tasting of Sassicaia 2010, 2018, and 2021 is served alongside Controfiletto—porcini-rubbed prime New York strip with charred shallot, roasted Romanesco, potato purée, and red wine reduction. The evening concludes with Sassicaia Grappa and Rosalba’s Amaretti Biscotti for a refined and memorable finish.
Tenuta San Guido is one of Italy’s most revered wine estates, located along the Tuscan coast in Bolgheri. Founded by Marchese Mario Incisa della Rocchetta, the estate gained international acclaim with the creation of Sassicaia, first released to the public in 1971 (from the 1968 vintage). Inspired by Bordeaux, Sassicaia broke from traditional Italian winemaking by blending Cabernet Sauvignon and Cabernet Franc, ultimately giving rise to the Super Tuscan movement. Today, Tenuta San Guido remains a benchmark for elegance, structure, and longevity, with Sassicaia recognized worldwide as one of the most collectible and influential wines ever produced in Italy.
