This Chocolate Cream Puff Class offers an immersive, 2.5-hour culinary journey into the world of French choux pastry. Students will learn the technical foundations of pâte à choux through live demonstrations and interactive filling stations—taking you from the creation of the cooked "panade" to the assembly of professional-grade decorated cream puffs.Class Participation Breakdown:

What You Will Learn
- The Art of Choux: Understand the science of pâte à choux, including starch gelatinization, moisture control, and how to achieve the perfect "V" consistency for a smooth, shiny batter.
- Craquelin Mastery: Discover how to use these sweet, crunchy discs to add professional texture, sweetness, and a uniform shape to your pastries.
- Salted Caramel Technique: Watch a live demonstration of the "wet method" for caramel, featuring tips on how to avoid crystallization.
- Filling & Decorating: Learn to fold homemade salted caramel into light chantilly cream and practice professional assembly with fresh raspberries and powdered sugar.
Class Schedule
- Introduction (10 mins): Welcome, instructor introductions, snacks and beverages.
- Pate a Choux Batter (30 mins): A detailed demonstration of the choux batter focusing on ingredient purposes and the gelatinization process.
- Craquelin & Piping (20 mins): Brief demo on craquelin followed by student piping practice, focusing on spacing.
- Break & Bake (10 mins): Leg stretch and beverage refills while the puffs enter the oven.
- Salted Caramel Demo (40 mins): A step-by-step look at creating a deep amber sauce.
- Filling & Decorating (40 mins): Hands-on assembly at student stations to fill and decorate both craquelin and traditional fruit-filled puffs.
Amenities Included
- Refreshments: Access to a snack counter including house-made drinks, charcuterie and fruit skewers, desserts, and a Keurig coffee station.
- Tools & Equipment: Class aprons and all necessary professional baking tools and piping tips.
- Take-Home Treats: Every student receives a box with 4 pre-made puffs to fill and decorate, plus any additional puffs made during the class piping session.
Notes:
- Tickets are NON-REFUNDABLE! If you are unable to attend the class, you may transfer the ticket to another person. Tickets are not transferable to another class.
- Doors will open 10 minutes before listed class start time. Students wishing to grab seats together are encouraged to arrive when doors open, otherwise we cannot guarantee reserved seating regardless if tickets were purchased together or not.
