Students will learn tips, techniques, and will be walked through step-by-step in this hands-on mole class.
Mole is a beautiful intricate sauce, savory and sometimes sweet. Mole, Molli, or Mulli, the word for sauce in Nahuatl, is not just a chocolate sauce, but a complex synchronization of seeds, plantains, chiles, tortillas, spices, and more. It is important to note, not all moles are equal, they come in assorted colors and textures and vary from state to state.

Jonathan Perez is the founder of Macheen, a taqueria that has expanded since 2016 into conducting work in various culinary incubators that include Boyle Height's infamous Milpa Grille, along with Distrito Catorce and Birote Deli, where he is collaborating with Horchateria Rio Luna.
From his initial start from being a student at Le Cordon Bleu, and bhow becoming as of recent, honored by LA Times as being listed as the 101 Best Tacos of 2024, he has participated in various open air food markets such as Smorgasboard and food Events such as L.A. Taco Madness (2021 winner) and Northgate Market's inagural 2024 Asada Festival.
