Ricotta & Spinach Ravioli: Handmade Pasta & Two Classic Sauces (Chef Erica Foffi)
This hands-on class is dedicated to one of the most beloved dishes of Italian home cooking: ricotta and spinach ravioli made entirely from scratch.
We will begin with a warm Italian welcome featuring freshly baked focaccia and marinated olives.
Participants will learn how to prepare fresh pasta dough, roll it properly, and shape ricotta and spinach ravioli with attention to texture and balance.
The ravioli will be served two ways:
· Brown butter and sage
· Classic tomato sauce and Parmigiano
Throughout the class, Chef Erica will share practical tips to help you recreate this dish confidently at home.
We will finish with a shared meal featuring the ravioli and a mixed green salad with balsamic.
