The evening’s menu is created by Chef Zach Geerson and will be served in the intimate setting of Silver King’s main dining room.
Four-Course Dinner Menu
First Course – Ceviche alla Siciliana
Local red snapper marinated with orange, pistachio, basil, and spring onion — a bright, Sicilian-inspired opening course.
Second Course – Risotto agli Asparagi
Asparagus risotto with crab-stuffed squash blossom, pecorino Romano, lemon zest, and fresh parsley.
Third Course – Maiale Arrosto alle Erbe
Herb and mustard roasted pork loin, grilled pork belly, spring vegetables, and strawberry-balsamic agro-dolce.
Fourth Course – Panna Cotta al Limone
Lemon panna cotta with roasted strawberries, pine nut praline, amaro reduction, and edible daisies.
