About this Event

Join us at Caliente Grill for Preserve & Fermented, an intimate pairing dinner that explores the beauty of time, technique, and transformation through food and drink.

The evening begins with a welcome tasting of Caliente Grill’s exclusive Club Barrel Select, offering guests a rare opportunity to experience our signature spirit and prepare the palate for what follows.

From there, guests will enjoy a thoughtfully curated four-course dinner, highlighting preservation and fermentation techniques — from curing and pickling to koji, sourdough, fermented fruits, and carefully curated proteins — paired with handcrafted mezcal cocktails and tastings designed to complement each course.

Throughout the evening, guests will gain insight into ingredients, fermentation processes, and pairing philosophy, while enjoying the warm, communal atmosphere Caliente Grill is known for.

This is a one-night-only experience created for those who appreciate culinary depth, storytelling, and artisanal Joven mezcal.

Welcome Tasting

Caliente Grill Exclusive Barrel Select Tequila Patron
A signature tasting aged in cognac barrels, opening the evening and set the tone.


First Course – Preserved Beginnings

Duck charcuterie featuring house-made prosciutto, rillettes, and chicharrón, accompanied by mustard, artisan bread, and fruit preserves.

Paired with: Mezcal cocktail highlighting fermented fruit elements.


Second Course – Comfort Through Time

Duck tortilla soup with dry beans, hominy, and dried chiles.

Paired with: Mezcal cocktail with gentle spice and warmth.


Third Course – Fermented Power

Chef-driven lomo saltado with whole-cut beef, fermented fries, pickled onions, dried tomatoes, and ají amarillo.

Paired with: Structured mezcal sour & fruity style cocktail.


Fourth Course – Sweet Transformation

Sourdough buñuelos with miso caramel and fermented chocolate.

Paired with: Warm Cholate & Mezcal dessert sip.
