FIRE ON THE WATER: A Greek Psari Taverna
(“Fish Tavern” · p-SAH-ree tah-VER-nah)
Pier Passport is our signature series designed to take guests on a journey—across the culinary destinations of Pier Sixty-Six and beyond our borders. Each month, a different venue hosts a themed evening where cuisine, cocktails, and culture come together in a way that is immersive, transportive, and distinctly its own.
For one night only, Pier Passport sets sail for the Greek coast.
It begins the way all great Greek evenings do: something cold to drink, something warm to share, and the quiet understanding that nobody is in a hurry. On June 11 in Sotogrande, Chef Michael Toker builds that table—and for him, it is a deeply personal one. Rooted in both the Turkish and Greek coast, it is precisely that heritage that shaped this evening: a tribute to the psari taverna, the small family-run restaurants of the Greek coast where there is no printed menu, only what the sea gave up that morning and a table full of people glad to be together. With the marina just outside, the setting chose itself.
The evening moves through welcome drinks and meze, into raw and luminous starters, then the heat and drama of live open-fire cooking—seafood grilled in full view, passed around the table while still warm from the flame. The night earns its finale with a whole fish, presented and carved tableside with ceremony. It closes sweetly and quietly—in the way that only the best evenings know how to end.
The table is set. The fire is lit. Secure your seat.
