Learn to roll, torch, and plate – Nikkei-style!
Join Chef José for an evening of bold Nikkei flavours and hands-on cooking in the heart of Edmonton. You'll learn to prepare authentic Nikkei-style sushi from scratch: discovering how to balance acidity, texture, and heat so each piece feels intentional.
Nikkei cuisine brings together refined Japanese technique and vibrant Peruvian ingredients, born from Japanese immigration to Peru in the early 20th century.
The evening begins at Otto Food & Drink with a chance to meet your fellow food lovers before diving into the two-hour cooking workshop. You’ll make three dishes here and enjoy one special cocktail on the house. We’ll guide you through each step to bring these dishes to life:
- Chilcano (cocktail) — with pisco, ginger ale, bitters, and fresh lime juice
- Nikkei-style salmon roll — with mango, avocado, cucumber, and garnish
- Torched salmon nigiri — squid ink infused rice and torched ají amarillo garnish
- Tiradito estilo nikkei — salmon tiradito, with Peruvian corn, sweet potato, topped with crispy wontons
You'll leave with a copy of the recipes and guidance on where to find the ingredients locally so you can bring these flavours home.
Arrive hungry, bring a good attitude, and get ready to learn the Nikkei flavours of Peru!

Timeline:
5:30-5:45 PM – Arrive at Otto Food & Drink
5:45–6:00 PM – Welcome and introductions
6:00–8:00 PM – Hands-on cooking workshop
8:00–8:30 PM – Sit down and enjoy your creations

Spots are filled on a first-come, first-served basis and require full payment.
Knife work is part of the experience. We'll walk you through everything carefully so you can feel confident at the table.
We reserve the right to cancel any class due to minimum enrollment not being met, scheduling conflicts, chef availability, or other unforeseen circumstances. If a class is cancelled for any of the above reasons, you will be notified via email and issued a full refund to your original method of payment.
