Scallion Pancake has a special place in my extended family. If you have never tried it, it is addictively good. When done well, it is crispy on the outside and soft and fluffy on the inside. I especially love simple foods like this where you could create something so delicious with only three key ingredients: flour, oil, and scallion. The difference between a crispy and fluffy pancake versus a soggy and dense dough is all in the technique and simple tricks.
The class is interactive, full of amazing family and travel stories, and uses 3 simple ingredients: flour, vegetable oil, and scallion. We will start by making the dough for the pancake from scratch. While that is resting, we will prepare the scallion and talk about variations on how to make this your own. Once the dough is ready, you will learn a few tricks to create a flavorful and flaky pancake. The cooking process is also key to creating a crispy and fluffy pancake, versus an under-cooked, soggy, or dense dough. You’ll make one medium-sized pancake during this online cooking class. It is best served immediately while it is still hot. You could also double the recipe and freeze the uncooked pancake for later.

Ingredients:
1. All Purpose Flour, 100g (1cup)
2. Cold Water, 70g (1/3 cup)
3. Salt, 4g (1/2 tsp)
4. Vegetable Oil, 2 TBSP
5. Finely Chopped Scallion, 1/3 Cup
Kitchen Setup:
1. Medium Bowl and Clean Wet Towel (for the dough)
2. Rolling Pin (or empty wine bottle)
3. Large Flat Non-Stick Pan with Lid
