I’m excited to announce that we are planning a once-a-month course starting in March 2025, designed for those interested in learning about medicinal plants, foraging,natural remedies, health and well being. The sessions will be held on Saturdays, making it convenient for people with weekday commitments.

Join us for a once-a-month Herbal Medicine journey over 12 months, featuring 9 immersive Saturday sessions at One garden and around the beautiful gournds of Stanmer Park . With an option of adding two residential all in clusive study retreats.

You’ll learn to identify weeds that heal in the grounds of Stanmer Park. While sipping tea in the wonderful One garden cafe, walking in woodland whist harvesting and making your own medicine from natures countryside Ph*rm*cy, making it the ideal environment for hands-on learning in the South Downs National Park.

This immersive, hands-on course will guide you through the changing seasons, allowing you to explore the use of herbs in various forms throughout the year.Each month, we will explore a different system of the body and how herbs can support your health and well-being. This hands-on course will guide you through harvesting herbal remedies, foraging, and practical uses of medicinal plants throughout the seasons.


Julia is a one of the UK’s most highly respected Medical Herbalists. Practicing for over 25 years she has taught at the School of Herbal Medicine, East London and Westminster Universities, Plumpton College, appeared on Channel 4’s Food Unwrapped and various radio programmes and conferences, consulted for the World Wildlife Fund, Plantlife and written research papers and consulted for Neal's Yard books.

Julia's dedication to her field is evident through her publications, including "Lost inLyme," released by Aeon Books and" Healing Herbs" published by Dorling and Kindersley 2022. She is currently writing a book about womens health. Passionate about medicinal plant conservation, Julia actively promotes self-care and empowerment in health decisions. She is deeply involved in research and collaboration within the healthcare community, particularly in areas concerning sustainable health care systems growing your own health. Her background includes practising in a an intergrative health care centre in a GPs surgery in Herstmonceux, designing herb gardens and working with comunity groups.

Daphne Lambert has cooked, studied, taught & written about food all her adult life. She has run a nutritional consultancy practice for over 25 years working with schools, colleges and organisations looking at ways to nourish well being. Daphne is the founding member of Greencuisine Trust and brings her passion for food that truly nourishes, body, mind & soul, together with diverse experiences in the world of food, to her work as a nutritionist & educator within the Trust. Daphne has worked with Dr Romy Fraser OBE partron and founding Neals Yard Remedies in 1981 and run many of the retreats and traiing programs for Neals Yard.Through inspiring projects, courses and consultancy, the Trust focuses on the interwoven relationships that bring life giving food to the table.
