Charred Brussel sprouts & parsnips, cranberry relish, Honeycrisp apple matchsticks, crumbled Gouda & crushed hazelnuts topped with a fresh sage and apple vinaigrette
Course 3: Chicken a la Forestiere
Brined and sous vide chicken breast pan seared in thyme butter, wild mushroom ragout, and mushroom cream sauce, served with turnip puree, glazed carrots, pearl onions and wilted kale
Course 4: Scallops
Pan seared scallops, sage brown butter, cranberry beurre blanc, confit fingerling potatoes & acorn squash with wilted kale and shallots, pear matchsticks, and cranberry gelle
Course 5: Dessert
Carrot cake and cheesecake layered together, sour cream topping and pecans
