Noboborsho is celebrated with great gusto in Kolkata and whole of West Bengal keeping to traditions and adding modernity too. Bengali’s being ‘Bhojon Roshik’ our plates are full with our favourite dishes and we don’t want to miss out on any of the dishes that we love to eat on this day from Dawn to Dusk – I have selected some of my favourites adding a touch of modernity to the traditional dishes and some I kept to the tradition. Sada Ghee Bhaat – Steamed Basmati rice filled with a rich aroma from a dollop of ghee to start with; Thakurbari Narkol pur Bhora Begun Bhaja (Veg) – Stuffed Begun Bhaaja in Thakurbari style is a lipsmacking dish to enjoy the first course and compliments Sada Ghee Bhaat very well. This Begun has grated coconut with spices stuffed inside; Moong Dal with shrimps – Thick Moong Dal or Lentils with shrimps alongwith onion and spices gives this dish the reason to enjoy; Kaatla Komola – Kaatla fish cooked to perfection and glazed with Komola or Orange to give that tangy flavour; Kosha Mangsho with Aloo – Succulent Mutton cooked to tender perfection and without Aloo or Potato this dish remains incomplete. Bengali’s passion for Aloo gives this dish a distinctive flavour; Boondiya Payesh – a pudding with boondiya or chickpea flour mini balls garnished having a lingering taste of edible rose petals.
