Join us for this immersive outdoor fire cooking and feasting experience, curated to provide insight into what's possible using the rich tapestry of New Forest seasonal produce.
Featuring wild venison from the Hinton Admiral Estate, this memorable full day is guided by our expert team led by professional forager and fire cook Lee Morton (Instagram @fire_food_knives) and a very special guest chef.
For this exclusive showcase, Lee and the team bring decades of combined experience in fire cooking along with deep knowledge of foraging and game.
As a participant on the day you will learn how to prepare and cook venison and other wild, foraged ingredients of the New Forest.
Kick back with comrades and an organic Drop The Anchor beer, soaking up the atmosphere of our relaxed and cosy rural setting.
Whether you're looking for a fresh new idea to impress colleagues on a corporate event, or simply gain new culinary skills to show off at a dinner party; this experience promises to bring something unique and inspiring!
Our New Forest Venison Experience is a demonstration-style even where we invite audience participation.
It's interactive and fun! No cookery experience necessary.
Experience Overview
Breakfast:
Start your experience with us by arriving for 9:30am sharp, when we provide a tasty breakfast buffet prepared and served by the Origin Barbecue team. Your first meal of the day features the finest produce from Butcher Joe's of Highcliffe, served with our premier choice coffee, which is made with single origin Colombian rich roast beans supplied by Jaramillo Cafe.
Butchery Demo:
Our skilled butcher and fire chef Lee Morton guides you through a comprehensive venison breakdown, talking through each cut of meat and their culinary potentials.
Cooking Demos and Feasting:
Watch, learn and get involved in the preparation and cook-up of our stunning seasonal feasting menu on our various fire cooking equipment. Savour the anticipation of what's yet to come while you enjoy time with your colleagues and comrades in our cosy snug, with a talk through of the brewery's offerings. Sample the suggested pairing beers from Drop The Anchor Brewery's taphouse as your indulgent New Forest Venison feast is served.
Feasting Menu
Lunch:
Smoked Venison Birria Tacos - Hinton Admiral Estate Venison low 'n' slow cooked in the TMG offset smoker using local sustainable wood. Finished over the Kadai fire bowl and made fusing with some interesting local ingredients into a tasty tacos.
Dinner:
BBQ Seared Backstrap & Roasted Saddle with Fire-Roasted New Forest Root Vegetables - Hinton Admiral Estate Venison cuts roasted with a jus of foraged blackberries from East Close Fam, cooked on the Hellrazr Fortress. Served with seasonal chunky local root vegetables, charred over the Kadai fire bowl.
Dessert:
Sopley Farm Pumpkin Pie - Local chef's special pumpkin pie, wood-fired in the Gozney Dome.
Refreshments
Throughout the day, there is the option to try what you fancy from Drop The Anchor Brewery's offerings. Learn about their interesting ales brewed on-site, using golden barley harvested from the their field next to the yard. There are soft drinks and wines also available.
