On 8 March, Neon Pigeon will hand the reins to two formidable forces in hospitality: Head Chef
Danyi Gao of Shake Restaurant and Bar Bon Funk’s bartender Sa Rang Lee.
Named Time Out Shanghai’s Chef of the Year (2018), Gao brings her distinctive culinary voice to a
12-dish brunch menu that moves fluidly between nostalgia and modern technique. Expect
statement plates such as Drunken Spot Prawn with 20-Year Hua Diao, Crawfish Brioche Rolls
with Mentaiko, and Miso Burnt Cheesecake with Soy Sauce Caramel – dishes that are bold,
layered and unapologetically expressive.
Behind the bar, Lee – whose disciplined Korean bartending foundation meets contemporary
creativity – presents a guest shift showcasing her signature cocktails including Sarang Is Here
and Monkeys Like Apples. Since relocating to Singapore in 2023, she has quickly carved a
space for herself within the city’s competitive cocktail landscape, pairing technical precision with
quiet confidence.
