For 25 years Sylvia Casares, the James Beard semi-finalist, author, chef, restaurateur, teacher and authority on Texas border foods, has reigned as the Enchilada Queen over her popular restaurants, Sylvia’s Enchilada Kitchen. She has now taken a bit of her royalty to retail with her Sylvia’s Signature Sauces, a trio of the chef’s most popular sauces that have been a mainstay at her successful restaurants: Sylvia’s Salsa, Salsa Verde, and the Enchilada Chili Gravy. Throughout this class, you'll gain hands-on experience and expert tips on mastering these recipes with Sylvia. Whether you're a seasoned cook or a beginner, this class offers something for everyone.
About Sylvia Casares:
When it comes to claiming the crown for Houston’s enchilada kingdom, the Enchilada Queen is without question Sylvia’s Enchilada Kitchen owner Sylvia Casares. Her restaurants serve a whopping 19 varieties of hand-rolled-to-order enchiladas along with a variety of other border and Tex-Mex dishes. Sylvia was born on the Texas-Mexico border in Brownsville, Texas, and grew up with an acute interest in food, flavors and taste. She started with a degree in Home Economics from the University of Texas which eventually led to her working with restaurateurs all over the state until 1998 when she opened her own. She now has two, one of which is where this Enchilada Queen regularly holds court in the form of ongoing cooking classes. Over the years Sylvia and her restaurants have received international attention for her skills in the kitchen, including being named a semi-finalist for Best Chef: Texas by the distinguished James Beard Foundation. She is the author of the award-winning “The Enchilada Queen Cookbook” and creator of Sylvia’s Signature Sauces, three of the Enchilada Queen’s most popular sauces now available for retail sale in select stores, at the restaurants and online.
