Nick will be making Bo Ssam - a Korean slow roasted pork dish that is served with kimchi, rice and delicious sauces that are all scooped into crisp lettuce cups, wrapped up and devoured.The wines for this dinner will have a common theme: cold, crispy and high in acid, which will all help to balance the umami richness and spice of the pork and accoutrements.
