Bake your first real sourdough bread with a passionate Italian sourdough baker. During the workshop Grazia, founder of Il pane di una volta, will introduce you to Grannie, her Lievito Madre (Italian style Sourdough). We will take a look at the liquid and stiff version of Lievito Madre and how to use it in a basic no-knead method perfectly designed for home bakers. In this class we will address the different peculiarities of grains, the sustainability of sourdough baking and how to choose the right flour for sourdough fermentation.
