About Chef Mitsuharu Tsumura

Chef Mitsuharu "Micha" Tsumura is a Peruvian chef of Japanese descent. Throughout his career, he has received significant awards such as the Best Chef Award according to the Luces - Grupo El Comercio, in addition to being included in The Best Chef list, which recognizes the 100 best chefs in the world. He is the author of the book "Nikkei is Peru" and the director of the documentary "Peru, hidden treasure" for Netflix.

His most personal project is in Lima, the Maido restaurant, a true reflection of Micha's personality: kind, fun, and elegant. Throughout its 15-year history, Maido has been recognized nationally as the Best Restaurant in Peru for 5 consecutive years. Internationally, Maido currently ranks #1 on the prestigious Latin America's 50 Best Restaurants list (a position it has held uninterrupted from 2017 to 2019) and also holds the #6 spot on The World's 50 Best Restaurants, the prestigious global list.

Micha is a restless Chef who loves to explore new horizons and create new things, which is why his recipes accommodate both learned and inherited traditions as well as the most daring creativity. Micha's cuisine is full of powerful flavors, but at the same time delicate and balanced. Through his dishes, he invites us to travel throughout the geography of Peru, discovering the essential ingredients with which he creates a singular and unique experience. In addition to Maido, Micha successfully runs other gastronomic projects. In various locations in Lima, he runs Tori, a restaurant where roast chicken is the protagonist, and outside of it, in Panama, the Mai Mai restaurant and in Chile, Karai by Mitsuharu.

About Chef Antonio Bachour

Chef Antonio Bachour, who operates Bachour restaurants in Miami as well as Mexico has achieved international fame as an innovative and creative pastry talent. With his latest project Tablé, a new French-influenced dining destination in Miami’s Design District, he takes his skills to the next level, parlaying his ongoing culinary education into an elegant brasserie-style menu that reflects his passion, growth and personal style.

Growing up in Puerto Rico, food was the family business, and Antonio got his start at an early age, tasked with overseeing the family’s bakery at the age of 14. He fell in love with pastry and devoted himself to honing his trade in Puerto Rico; first as a pastry chef at the Sands Hotel and Casino and the Westin Rio Mar. In 2001, in hopes of continuing his growth as a chef, he headed to the mainland US; landing in Miami where he took on roles with Talula, DeVito South Beach and Scarpetta by Scott Conant in both New York and Miami.

In 2009 KNR Food Concepts approached Bachour about being part of the opening team at the W Hotel South Beach. Following that, he headed to Trump Soho Hotel in New York overseeing pastry for its restaurants he returned to Miami to the St. Regis Hotel, where from 2011-2016 he made his mark with the dessert programs for Chef Jean Georges’ (of 3* Michelin fame) outlets at the hotel.

Renowned for his hyper-creative desserts Bachour has been featured in every important national and international pastry publication including So Good Magazine, Dulcypas, Saber 7 Sabor, Star Chefs, Gourmet, Dessert Professional, Pastry Art & Design and the National Culinary Review. He is also the author of six books: Bachour, Bachour Simply Beautiful, Bachour Chocolate, Bachour the Baker, Bachour in Color and Bachour Gastro.
