About this Event
Join us for an interactive and informative butchery demonstration, aimed to help you maximise your sales and hopefully learn a little bit along the way.
Who we are
We are a butchery specialising in private butchery for other farmers and producers, whether it be for the freezer, farm shop, box scheme or anything in between!
About the event
This will be an informal demonstration of the traditional butchery that we employ, but including some creative ideas for different cuts and ways to maximise your returns from your livestock. We will be taking both a whole pig and a whole lamb and breaking them into primal cuts and then retail cuts to show you the hundreds of the possibilities, as well as the classic customer favorites.
This is suitable for any level of prior knowledge, and whether you are established in your farmgate sales or just thinking about selling direct.
We will also be covering yield percentages, grading and how this relates to meat returns, different processing/value added products, labelling and design and answering all your questions. Most importantly, breakfast and lunch are included, along with plenty of tea and coffee all day!
Topics covered:
- Butchery techniques, cuts and processes
- Calculating yields and maximising returns
- Lamb & pork grading and what this means in real terms
- Lamb & Pork packaging and labelling (the legal bit, what infor to include and label designs)
- Writing your cutting list/instructions
- Routes to sale & finding your customers
- The services Oink can provide
Rough itinerary for the day
8:30am-9:15am - Arrival, bacon sandwiches and hot drinks
9:15am - Introductions: who we are and the services we offer
10am(ish) - 1pm(ish) - live butchery demonstration and talk (refreshments available throughout)

Who is this event for
This is a friendly and informal event and we want this to be interactive so you get the most out of it, but please do note that this is very much geared towards farmers and producers - we will be running butchery demos for the general public later in the year.
As we hate to see food wasted, we have ticketed this event so that we know numbers to make sure we've got the right amount of bacon sizzling, coffee cups at the ready, and burgers pressed for lunch. Please do make sure to give us plenty of notice if you sadly can't make the event any longer.
