In this intimate chef showcase, Héctor shares the journey that shaped his cuisine — from cooking alongside his grandmother on the Atlantic coast of Spain, to traveling across four continents, to a recent culinary trip to Japan that deepened his appreciation for discipline, restraint, and respect for ingredients.
Through a thoughtfully curated tasting menu, guests will experience the dialogue between these cultures. Traditional Galician preservation techniques like curing, pickling, and fermentation meet Japanese precision, knife work, and umami-driven cooking. Fire, ocean influences, and seasonal ingredients tie the experience together.

Each course unfolds intentionally, moving from clarity to comfort, highlighting the harmony between land and sea, memory and technique, and tradition and evolution.
