Kölsch service is a German tradition where Kolsch is served in slim 7oz cylindrical glasses called Stange.

How it works — the ritual:

Servers (called Köbes) carry round trays — known as Kranz — loaded with several filled Stange.
As soon as your glass is empty (or nearly empty), a Köbes may quietly replace it with a fresh one — no need to order again. Each fresh pour
Each refill is tracked with a mark on your coaster. When you’re done, simply place the coaster on top of your glass to signal you don’t want any more.
