Emma Pooley climbed to the top of professional cycling in her 8-year career. She raced at 3 Olympics, won multiple stage races, and became time trial World Champion in 2010 – then transferred her talents to world-class trail running and triathlon. Through thousands of hours of training she hungered for real food rather than processed energy products. And that was the start of Oat To Joy! Emma wrote this book to share her passion for delicious sports food with other athletes.
