About this Event
Onigiri (rice balls) are the heart of Japanese home cooking — simple, comforting, and deeply nourishing.
In this fun, hands-on, select-your-own style cooking class, you’ll experience both collaborative cooking and personal customization while learning how to transform everyday rice into a nutrient-dense, gut-friendly meal using traditional Japanese fermentation techniques.
All dishes highlight the umami-rich flavors of Koji — without refined sugar. Vegan options are also available.

1. Hand-Pressed Onigiri (Make 3)
Learn how to shape fluffy, triangular rice balls and choose 3 flavors from 6 gourmet fillings:
• Wafu Tuna with In-House Mayo & Soy Sauce Koji
• Steamed Salt Koji Salmon
• Savory Okaka (bonito flakes)
• Sweet Umeboshi & Shiso Leaf (Vegan)
• Umami Mushroom Miso (Vegan)
• Creamy Avocado & Soy Sauce Koji (Vegan)
2. Sake Lees Hearty Miso Soup (Build Your Own)
Each pair selects:
✔ Classic bonito dashi or plant-based vegan dashi
✔ 6 ingredients from 10+ seasonal vegetable options
3. Salt Koji Pickles (served)
4. Hand-Whisked Matcha Amazake Latte (Iced)
Whisk premium matcha with a traditional bamboo chasen and pour over Koji amazake and plant-based milk.
STATION SETUP:
You will be cooking in teams! Groups of 2–3 will share their own station. Solo attendees* will be paired with a partner. Larger groups (4+) will be split across adjacent stations to ensure everyone has plenty of elbow room to cook!

- Minimum Enrollment: Classes require at least 6 participants. If a class doesn’t meet the minimum, it will be canceled 48 hours before the start time and a full refund will be issued.
- Age Requirement: Participants must be 18 years or older, as classes involve knives and gas stoves.
