Join us for a full day of outdoor training for ITC Level 2 Award in Food Hygiene for the Outdoors. This will be a very hands on practical course with the addition of theory and portfolio working, with holistic assessment methods throughout the day.The training is suitable for anyone involved with preparing, cooking, supervising and serving food in the outdoors: Forest School Leaders, Youth/ Children’s Workers, Scout/ Guide Leaders, DofE Leaders, Outdoor Coaches/ Educators, Adventure/ Expedition Leaders and Early Years Practitioners. Although we will be focusing on the outdoor environment, the theory around food safety and hygiene will also be relevant for those preparing food indoors.
Topics include:
- Importance of Food Safety in the woods (incorporating HACCP).
- Illnesses linked to food and the outdoors.
- Microbes and where they can be found.
- Personal Hygiene.
- Food Safety Control – planning a relevant HACCP.
- Hygiene Control – Temperature Control, Storage, Handling, Preparation, Cooking, Equipment etc.
The qualification is intended to provide the learner with an understanding of the benefits of Outdoor Food Hygiene. The qualification specifically covers roles and responsibilities, how to prepare, cook, and manage others preparing and cooking food within the outdoor environment using approved principles and practices.
We will cook a full meal on the day, so there is no need to bring your own food, unless you wish to. We will cook a number of savoury dishes for lunch and then some pudding type food for mid afternoon. Recipes are based on cheap simple foods like a Dhal, flatbreads, fritters, pancakes etc. We will also provide a refreshment area with hot water and tea/coffee etc.
Maxine Lock, centre manager for Peritia Training (www.peritiatraining.co.uk), will be delivering the training day. Maxine is a qualified teacher and a fantastic trainer and educator with over 30 years experience.
The day is being ran as part of a Train The Trainer programme for Martyn Griffiths (Director), to enable In Our Element to deliver this training in the future. The course is mostly made up of In Our Element staff, with remaining places being offered at a discounted rate of £95 (inc VAT) per person.
